Ingredients
- 2 lb Chicken thighs (boneless, skin-on, cut into bite-sized pieces)
- Salt and pepper (to taste)
- 0.25 cup Cornstarch (for coating)
- 2 tbsp Garlic (minced)
- 3 tbsp Honey
- 2 tbsp Soy sauce
- 1 tbsp Oyster sauce
- 1 Cucumber (large, sliced into thin pieces)
- 1 tbsp Garlic (minced, for salad)
- 2 tbsp Rice vinegar
- 0.5 tbsp Sugar
- 0.5 tsp Salt
- 1 tsp Sesame oil
- 1 tsp Red chili oil (optional)

In a bowl, mix sliced cucumber, minced garlic, rice vinegar, sugar, salt, sesame oil, and red chili oil. Set aside to marinate while you prepare the chicken.

Season the bite-sized chicken thighs with salt and pepper.

Coat the chicken thoroughly with cornstarch, shaking off any excess.

In a small bowl, whisk together the honey, soy sauce, and oyster sauce to create the glaze.

In a large pan, add oil and turn the heat to medium-high. Once the pan is hot, add the chicken pieces.

Pan-fry the chicken for 3-4 minutes on each side or until golden brown and crispy.

Add the minced garlic to the pan and sauté for 1 minute until fragrant.

Pour the honey garlic sauce over the chicken and toss on high heat for 1-2 minutes until the sauce thickens and coats the chicken evenly.

Notes
Using skin-on chicken thighs provides extra crispiness. If you prefer a spicier salad, increase the amount of red chili oil.
