Ingredients
- 3 cucumbers (Thinly slice with a vegetable peeler)
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- garlic (To taste; grate or finely mince)
- ginger (To taste; grate or finely mince)
- 1 tbsp gochujang
- toasted sesame seeds (To taste; for garnish)

Wash the cucumbers and pat them dry. Use a vegetable peeler to thinly slice them lengthwise. Thin slices allow the sauce to penetrate quickly, even with a short marinating time.

Pack the sliced cucumbers into a lidded storage container or food storage container.

Add the soy sauce, sesame oil, garlic to taste, ginger to taste, and gochujang to the container.

Cover and shake gently, or carefully mix everything with chopsticks or a spoon so the sauce coats the cucumbers evenly. Mix gently to avoid breaking the cucumbers.

Cover the container and refrigerate until thoroughly chilled. Let it rest for at least 15–20 minutes; the longer it chills, the more the flavors will meld.

Transfer to a serving dish just before eating, sprinkle with toasted sesame seeds to taste, and serve.
Notes
Thinly slicing the cucumbers with a vegetable peeler helps the sauce penetrate quickly. Chilling them well in the refrigerator makes them even more delicious. Adjust the amounts of garlic, ginger, and toasted sesame seeds to taste.
