Ingredients

  • 2 stick butter (softened, not microwaved; for the cake)
  • 2 cup sugar (regular granulated)
  • 2 eggs
  • 3 cup flour (sifted)
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 2 cup chunky applesauce
  • 1 cup cold coffee
  • 8 oz cream cheese (one brick)
  • 1 stick butter (for the icing)
  • 1 tsp vanilla
  • 3 cup powdered sugar (plus more if needed for consistency)

Steps

    Cream together two sticks of softened butter (or margarine) and the regular sugar until well combined. Do not use a microwave to soften the butter.

    Add the eggs to the butter mixture and mix again until incorporated.

    Sift the flour. Add it to the creamed mixture one cup at a time, mixing thoroughly between each addition.

    Add the baking soda and cinnamon to the batter and mix again.

    Add the chunky applesauce and cold coffee to the mix bit by bit, stirring well between portions.

    Grease and sugar your baking pan (use sugar instead of flour to coat the pan).

    Bake at 350°F (175°C) for 35 minutes.

    While the cake is baking, prepare the icing by beating together the 8 oz brick of cream cheese and the remaining stick of butter until smooth and creamy.

    Add in the vanilla and powdered sugar as needed, beating until a thick and spreadable consistency is achieved.

Notes

Grease the pan with sugar instead of flour for a better crust. This recipe is a favorite for Thanksgiving and was shared in memory of Kathleen Turner.
