Ingredients

  • 1 pack Lotus Biscoff biscuits (divided; 16 biscuits used for the border, the rest for the base)
  • 2 tbsp Butter (melted)
  • 300 g Cream cheese
  • 25 g Powdered sugar (can use up to 30g)
  • 2 tbsp Biscoff spread creamy (melted, for filling)
  • 200 ml 35% fat whipping cream
  • 3 tbsp Biscoff spread creamy (melted, for topping; can use up to 4 tbsp)
  • Biscoff crunches (for garnish)
  • 1 Lotus Biscoff biscuit (for garnish)

Steps

    Prepare an 8 inch (19 cm) springform tin. Place 16 Lotus Biscoff biscuits vertically around the edges of the tin to create a border.

    Blend the remaining Lotus biscuits from the pack into fine crumbs. Mix the crumbs with 2 tablespoons of melted butter until the mixture resembles wet sand.

    Press the biscuit and butter mixture firmly into the middle of the tin to form the base. Place the tin in the fridge to rest while you prepare the filling.

    In a chilled bowl, whip 200 ml of 35% fat whipping cream until stiff peaks form. Set aside.

    In a separate large bowl, whip 300 g of cream cheese and 25-30 g of powdered sugar together until smooth.

    Add 2 tablespoons of melted Biscoff spread to the cream cheese mixture and whip until well combined.

    Gently fold the whipped cream into the cream cheese mixture until no white streaks remain.

    Transfer the cream filling into the prepared tin and smooth out the top with a spatula.

    Melt 3-4 tablespoons of Biscoff spread and pour it over the top of the cheesecake, spreading it evenly to the edges.

    Garnish the top with Biscoff crumbles and one whole biscuit for presentation.

    Refrigerate the cheesecake for at least 1-2 hours to allow it to set completely before serving.

Notes

Ensure the cream cheese is at room temperature for easier mixing, but the whipping cream should be cold to whip properly. For a cleaner slice, use a hot knife to cut through the chilled cheesecake.
