Stir-Fried Cumin Green Beans and Chicken

Ingredients
- 2 tbsp neutral-tasting oil (such as peanut, sunflower or grapeseed, plus more if needed)
- 1 lb ground chicken (preferably dark meat; can substitute ground turkey, pork, beef, or lamb)
- 1 tsp fine sea salt (divided (3/4 tsp and 1/4 tsp); or table salt)
- 8 oz green beans (cut into 1-inch lengths)
- 2 chiles (red or green, seeded or not, thinly sliced)
- 5 garlic cloves (minced)
- 1 tbsp fresh ginger (grated)
- 1 tsp cumin seeds
- 0.25 cup cilantro or basil leaves (and tender stems, chopped, plus more for serving)
- 3 tbsp rice wine vinegar (plus more for serving)
- 4 tsp soy sauce (plus more to taste)
- 1 tsp hoisin sauce (or 1/2 tsp honey)
- white rice or rice noodles (cooked, for serving)

Heat a large (12-inch) skillet or wok over medium-high heat for 1 minute.

Add the neutral oil and heat for another 30 seconds until hot but not smoking.

Stir in the ground chicken and 3/4 teaspoon of the salt. Cook, breaking up the meat with a spoon, until browned and crisp, about 5 to 8 minutes.

Transfer the cooked chicken to a plate and set aside.

Return the pan to the heat and add more oil if the surface looks dry.

Stir in the green beans and stir-fry until they are crisp-tender and bright green, about 1 to 3 minutes.

Add the sliced chiles, minced garlic, grated ginger, cumin seeds, and the remaining 1/4 teaspoon salt. Cook, stirring frequently, until fragrant, about 1 minute longer.

Return the chicken to the skillet, along with the chopped cilantro (or basil), rice wine vinegar, soy sauce, and hoisin sauce.

Stir briefly to combine all ingredients. Taste and add more vinegar or soy sauce if needed.

Top with additional chopped cilantro and serve immediately with cooked white rice or rice noodles.
Notes
If you prefer softer green beans, increase the stir-fry time in step 6 to 3-5 minutes. Ground pork, beef, or lamb can be used for a richer flavor profile. If cumin seeds are unavailable, 1 teaspoon of ground cumin can be substituted.
