Ingredients

  • 1 lb ground turkey
  • 1 carrot (small, finely grated)
  • 0.5 cup broccoli (very finely chopped; may be used raw or softened first)
  • 1 egg
  • 0.333 cup oat flour (or use breadcrumbs)
  • 0.25 cup shredded cheese
  • 2 tbsp Greek yogurt
  • 0.5 tsp garlic powder
  • 0.25 tsp paprika (The source says “little paprika.”)
  • salt (to taste)
  • black pepper (to taste)

Steps

  1. 1

Finely grate the carrot and chop the broccoli into very small pieces.

  2. 2

Use the broccoli raw, or, if you prefer it softer, steam or boil it for about 4–5 minutes first. This softening step is optional.

  3. 3

Add the ground turkey, grated carrot, finely chopped broccoli, egg, oat flour or breadcrumbs, shredded cheese, Greek yogurt, garlic powder, paprika, salt, and pepper to a large bowl.

  4. 4

Mix just until everything is combined. Do not overmix, as this can make the meatballs denser.

  5. 5

Form the mixture into meatballs and place them on a baking sheet lined with parchment paper.

  6. 6

Bake at 400°F (200°C) for 18–22 minutes, until cooked through.

Notes

The post mentions serving the meatballs with tomatoes and bell pepper on the side, but does not provide quantities or preparation instructions for them. Broccoli may be used raw if finely chopped; steaming or boiling it for 4–5 minutes is optional.
