- 3 bag Frozen Sweet Corn (12 oz bags, thawed)
- 0.66 cup Jalapeños (about 3 peppers, deseeded and diced)
- 1 cup Red Onion (diced, for corn salsa)
- 1 cup Cilantro (chopped, for corn salsa)
- 1 tbsp Salt (to taste, for corn salsa)
- 1 Lime Juice (whole lime juiced, for corn salsa)
- 1.5 lb Monterey Jack Cheese (shredded)
- 1.5 head Romaine Lettuce (shredded)
- Sour Cream (Daisy brand recommended)
- Pico de Gallo (store bought)

Prepare the black beans: In a medium saucepan, combine 3 cans of black beans with 2 tsp onion powder, 2 tsp salt, and 1 tbsp lime juice. Heat over medium heat until warmed through, then set aside.

Prepare the corn salsa: In a large mixing bowl, combine 3 bags of thawed sweet corn, 2/3 cup diced jalapeños (about 3 peppers, deseeded), 1 cup diced red onion, 1 cup chopped cilantro, 1 tbsp salt, and the juice of one whole lime. Mix thoroughly and adjust seasoning to taste.

Prepare the guacamole: In a bowl, mash 3 large ripe avocados. Add 1/4 cup red onions, 3 tbsp chopped jalapeños, 1/3 cup cilantro, 2 tsp salt, and the juice of one whole lime. Mix until desired consistency is reached.

Prepare the cilantro lime rice: Take 6 cups of cooked long grain rice (ideally cooked with bay leaves for flavor). Add 1 tbsp salt, the juice of half a lime, and 2/3 cup chopped cilantro. Fold together until well combined.

Assemble the bowls: Start with a base of cilantro lime rice. Add a scoop of black beans, corn salsa, and guacamole. Top with shredded Monterey Jack cheese, shredded romaine lettuce, sour cream, and pico de gallo as desired.
