Cheesy Cajun Chicken Garlic Bread

Ingredients
- 1 ciabatta loaf (smaller loaf, or bread of preference)
- 7 oz low moisture mozzarella (grated)
- 4 tbsp butter (softened, room temperature)
- 1 garlic clove (minced)
- 1 tbsp fresh parsley (chopped)
- salt (pinch)
- 0.75 cup heavy cream
- 0.33 cup Parmesan cheese (grated)
- 0.5 red bell pepper (chopped)
- 1 small onion (finely chopped)
- 2 garlic cloves (minced)
- 1.5 tsp Cajun seasoning (1-2 tsp depending on preference)
- 0.5 tsp dried oregano
- 0.5 tsp paprika
- chili flakes (to taste)

- 2 small chicken breasts (or 1 large breast)

- 1 tbsp olive oil (for cooking chicken)
- 1 tbsp fresh parsley (optional, for topping)
Steps

Slice the chicken breasts in half lengthwise so they are an even thickness.

Season the chicken with Cajun seasoning, garlic powder, paprika, salt, and black pepper.

Heat olive oil in a pan over medium-high heat and cook the chicken for 4-5 minutes per side until golden and cooked through.

Remove the chicken from the pan and slice into strips.

In a small bowl, mix the softened butter with minced garlic, chopped parsley, and a pinch of salt until well combined.

Spread the garlic butter onto the cut side of the bread loaf.

In a pan, sauté the chopped onion for 1-2 minutes until soft.

Add the minced garlic and cook for 30-60 seconds until fragrant.

Pour in the heavy cream, Parmesan, Cajun seasoning, paprika, chili flakes, salt, and pepper.

Simmer the sauce for 3-4 minutes until slightly thickened.

Spoon a layer of the Cajun sauce over the garlic buttered bread.

Sprinkle the grated mozzarella over the sauce, then add the sliced chicken strips.

Drizzle a little more sauce on top of the chicken and save the remaining sauce for dipping.

Cook in the air fryer at 355°F (180°C) for 8-10 minutes, or in the oven at 375°F (190°C) for about 20 minutes, until the cheese is melted and bubbly.

Allow the bread to rest for 1-2 minutes, top with fresh chopped parsley, and serve with the remaining sauce.
Notes
The recipe suggests using ciabatta but any preferred loaf of bread will work. Save the extra Cajun sauce for dipping the bread.
