Ingredients

  • 4 Real Good Foods chicken strips (available at Costco; cooked until crispy according to package instructions)
  • 1.5 cup sushi rice (cooked and seasoned with rice vinegar, sugar, and salt)
  • 2 nori sheets (dried seaweed sheets)
  • 0.5 cucumber (sliced into long, thin matchsticks)
  • 0.5 avocado (sliced into thin strips)
  • 2 tbsp spicy mayo (for drizzling)
  • 1 tbsp unagi sauce (eel sauce; for drizzling)

Steps

  1. 1

Cook the chicken strips according to the package instructions until they are golden brown and crispy. Set aside to cool slightly.

  2. 2

Prepare the sushi rice by rinsing it until the water runs clear, cooking it, and then seasoning it with a mixture of rice vinegar, sugar, and salt while still warm.

  3. 3

Place a sheet of nori on a bamboo sushi rolling mat, shiny side down.

  4. 4

Spread a thin, even layer of seasoned sushi rice over the nori, leaving about an inch of space at the top edge.

  5. 5

Lay the crispy chicken strips, cucumber matchsticks, and avocado slices in a horizontal line across the center of the rice.

  6. 6

Using the bamboo mat, firmly roll the nori over the fillings, applying gentle pressure to create a tight cylinder.

  7. 7

Wet a sharp knife with water and slice the roll into bite-sized pieces.

  8. 8

Drizzle the sliced rolls with spicy mayo and unagi sauce before serving.

Notes

The author specifically recommends Real Good Foods chicken strips from Costco for their quality and lack of antibiotics. Ensure the rice is properly seasoned to achieve the 'better' taste mentioned in the post.
