A refreshing iced lemon tea inspired by the sweet, citrusy drinks served at Hong Kong-style cafés. Strong black tea, fresh lemon, sugar, and plenty of ice create a bright, balanced drink.

Ingredients

  • 1 tea bag black tea (Use a strong black tea such as Lipton or English Breakfast.)
  • 1 cup boiling water
  • 2 tbsp granulated sugar (Adjust to taste; Hong Kong-style lemon tea is traditionally fairly sweet.)
  • 0.5 lemon (Juiced, with additional thin slices for serving.)
  • 1 cup ice (Use enough to chill the tea thoroughly.)

Steps

    Brew the black tea by placing the tea bag in a heatproof glass or measuring cup and pouring over the boiling water. Steep for 3–5 minutes, until the tea is noticeably dark and strong.

    Add the sugar to the hot tea and stir until completely dissolved. Taste and add more sugar if a sweeter café-style drink is desired.

    Squeeze in the juice from half of the lemon and stir to combine. Remove any seeds.

    Fill a tall serving glass with ice. Pour the lemon tea over the ice and stir until chilled.

    Garnish with thin lemon slices and serve immediately.
