Homemade Oreos

Ingredients
- 1.25 cup all-purpose flour (plus more for dusting)
- 0.5 cup unsweetened cocoa powder (dark or Dutch-processed recommended for Oreo flavor)
- 1 tsp baking soda
- 0.25 tsp salt (for the dough)
- 1 cup granulated sugar
- 0.5 cup unsalted butter (cold, cut into pieces for the dough)
- 1 egg (large)
- 0.5 cup unsalted butter (room temperature, for the filling)
- 1 tsp vanilla extract
- 2 cup powdered sugar (sifted)
- salt (a pinch for the filling)

In a food processor or mixer, combine the flour, cocoa powder, baking soda, salt, and sugar.

Add the cold butter a few pieces at a time, pulsing or mixing until the mixture looks like coarse crumbs.

Add the egg and continue to mix until a cohesive dough forms.

Shape the dough into a flat disc, wrap it tightly in plastic wrap, and chill in the refrigerator for 30 minutes until firm.

Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.

Roll the chilled dough out to 1/8-inch thickness on a lightly floured surface and cut into 2-inch circles using a cookie cutter. Alternatively, roll tablespoon-sized balls and flatten them manually.

Place the shaped cookies on the prepared baking sheets and chill them for an additional 10 minutes to help them hold their shape.

Bake for 9-10 minutes, rotating the pans halfway through the cooking time, until the cookies are set. Let them cool completely on the pan or a wire rack.

To make the filling, beat the room-temperature butter and vanilla extract together until smooth.

Add the powdered sugar and a pinch of salt, then whip the mixture until it is light and fluffy.

Assemble the sandwiches by adding 1 teaspoon of filling to the center of one cookie. Place a second cookie on top and gently press to spread the filling to the edges. Repeat for all cookies.
Notes
Store the finished cookies in an airtight container for up to 5 days. For the most authentic Oreo look, use 'Dark' or 'Black' cocoa powder.
