Big Mac Tacos

Ingredients
- 1 lb ground beef (80% lean, 20% fat)
- 9 mini taco tortillas (8-10 tortillas)
- 10 slices cheddar cheese
- 1 cup lettuce (chopped)
- 1 cup pickles
- salt (to taste)
- 1 cup mayonnaise (for the sauce)
- 3 tbsp ketchup (for the sauce)
- 1 tbsp Dijon mustard (for the sauce)
- 2 tbsp yellow onion (diced, for the sauce)
- 1 tbsp sweet relish (chopped, for the sauce)
- 1 tbsp white vinegar (for the sauce)
- 1 tbsp garlic powder (for the sauce)
- 1 tsp black pepper (for the sauce)
- 1 tsp smoked paprika (for the sauce)

In a bowl, combine the mayonnaise, ketchup, Dijon mustard, diced yellow onion, salt, chopped relish, white vinegar, garlic powder, black pepper, and smoked paprika.

Mix the ingredients together until well combined. Refrigerate the sauce for at least 30 minutes to allow the flavors to meld.

Heat a skillet over high heat and add a small amount of oil.

Place 2-3 tablespoons of ground beef in the center of each tortilla. Gently press down the ground beef onto the tortillas to create an even layer.

Sprinkle a pinch of salt on top of the ground beef.

Place the meat side down in the hot skillet and immediately lower the heat to medium-low. Cook for 4-5 minutes or until the ground beef is cooked through. If your skillet is large enough, cook two tacos at a time.
