Steps
Cut the three potatoes into small pieces.
Place the potato pieces in a pot and add water (H2O) and a huge amount of salt.
Boil the potatoes for 20 minutes until they turn soft.
Drain the potatoes and roughly mash them in a large bowl.
Add cornstarch, glutinous rice flour, cheese, salt, and pepper to the mashed potatoes.
Mix the ingredients well and knead them into a smooth dough.
Line a square pan with plastic food wrap and press the dough into the pan to create an even layer.
Keep the pan in the freezer for 30 minutes so that the dough firms up and won't fall apart when you cut it.
Remove the dough from the freezer and cut it into your preferred stick shape.
Optional: Use the back of a knife to press a decorative pattern into the surface of the sticks.
Heat oil in a deep pan over medium heat. Deep-fry the potato sticks for 5 minutes until they turn light golden.
Increase the heat to high and deep-fry for an additional 30 seconds until they turn a deep golden brown and crispy.
Serve the hot potato sticks with chili pepper and ketchup for dipping.
Notes
The addition of glutinous rice flour provides a chewy 'mochi-like' texture inside. Freezing the dough is a critical step to ensure the sticks maintain their shape during the frying process.
