Ingredients
- 1 bone-in, skin-on pork shoulder (Whole; 8 to 12 pounds total)
- kosher salt (Use liberally)
- freshly ground black pepper (Use liberally)
Steps
- 1
Adjust the oven rack to the middle position and preheat the oven to 250°F (121°C).
- 2
Line a rimmed baking sheet with heavy-duty aluminum foil and set a wire rack inside it. Place a piece of parchment paper on top of the wire rack.
- 3
Season the pork liberally on all sides with kosher salt and freshly ground black pepper, then place it on the parchment paper.
- 4
Transfer the pork to the oven and roast until a knife or fork inserted into the side meets very little resistance when twisted, about 8 hours total.
- 5
Remove the pork from the oven, tent it with foil, and let it rest at room temperature for at least 15 minutes and up to 2 hours.
- 6
Increase the oven temperature to 500°F (260°C) and let it preheat.
- 7
Return the pork to the oven and roast until the skin is blistered and puffed, rotating it every 5 minutes, about 20 minutes total.
- 8
Remove the pork from the oven, tent it with foil, and let it rest for an additional 15 minutes.
- 9
Serve by picking the meat apart in the kitchen, or bring the pork to the table and let guests pick the meat and crispy skin themselves. Serve with a sauce of your choice on the side.
