15-Minute Kimchi Beef Udon Stir-Fry

Ingredients
- 2 servings udon noodles (fresh or frozen)
- 200 g thinly sliced beef
- 0.5 cup kimchi (including juice)
- 1 tbsp gochujang (Korean red chili paste)
- 0.5 tbsp gochugaru (Korean chili powder)
- 1 tbsp soy sauce
- 0.5 tsp sugar
- 0.25 cup water
- 2 garlic (cloves, minced)
- 1 tbsp cooking oil (for frying)
- 2 egg (fried, for topping)

Bring a pot of water to a boil. Add the udon noodles and cook for 1-2 minutes until loosened and tender.

Drain the udon noodles and set them aside.

In a small bowl, combine the gochujang, gochugaru, soy sauce, sugar, and 1/4 cup water. Whisk until the sauce is smooth and the sugar is dissolved.

Heat oil in a large pan or wok over medium-high heat. Add the minced garlic and stir-fry for 1-2 minutes until fragrant and lightly golden.

Add the thinly sliced beef to the pan and cook for 1-2 minutes until browned.

Add the kimchi and the cooked udon noodles to the pan. Stir-fry for 1 minute to combine.

Pour the prepared sauce over the mixture and stir-fry for 2 minutes until the noodles and beef are well-coated and the sauce has thickened slightly.

Serve immediately, topped with a fried egg for each portion.
Notes
Thinly sliced beef (like ribeye or brisket often found at Asian grocery stores) works best for this quick stir-fry as it cooks very fast.
