Mapo Tofu Udon
A beautiful marriage of Chinese mapo tofu and Japanese udon that is spicy, hot, and flavorful. For the maximum experience, double up the carbs by soaking scoops of rice in the leftover soup.

Ingredients
- 1 tbsp cooking oil
- 1 tbsp garlic (minced)
- 1 tbsp ginger (minced)
- 200 g ground pork
- 0.5 tbsp soy sauce
- 1 tbsp cooking wine or mirin
- 1 tbsp spicy bean sauce (dou ban jiang)
- 150 g silken tofu (cut into cubes)
- 1.5 cup water
- 1 serving udon noodles (typically 200-250g)
- 0.5 tsp ground sichuan peppercorns (optional)
- green onions (chopped, for garnish)

Add 1 tbsp of oil in your pot over medium heat.

Stir fry the minced garlic and ginger for about 1 minute until fragrant.

Add in the ground meat and stir-fry until it’s cooked through.

Add soy sauce, cooking wine, and spicy bean sauce; let it cook for a minute to develop the flavors.

Add the cubed silken tofu and 1 1/2 cups of water.

Let everything cook and simmer for 3 minutes.

Add the udon noodles and cook for an extra 1-2 minutes until the noodles are heated through and tender.

Sprinkle with chopped green onions and ground sichuan peppercorns (if using) and enjoy!
Notes
For an extra hearty meal, the author suggests serving with a scoop of rice to soak up the spicy broth.
