- 1 medium russet potato (Peeled and cut into 1-inch pieces)

Return the reserved potato water to a vigorous boil. Add the pasta and cook according to the package directions until just shy of al dente. Reserve about 1½ cups of the starchy pasta water, then drain the pasta.

While the pasta cooks, heat 2 tablespoons of the olive oil in a large skillet over medium heat. Add the artichoke hearts and cook, turning occasionally, until lightly browned and heated through, about 4 minutes.

Add the cherry tomatoes and cook until they begin to soften and release some juice, about 2 to 3 minutes. Add the garlic and cook until fragrant, about 30 seconds; do not let it brown.

Stir the mashed potato into the skillet along with about 1 cup of the reserved pasta water. Simmer gently, stirring, until the potato loosens into a smooth, creamy sauce. Add more pasta water a little at a time if needed.

Add the drained pasta to the skillet. Toss continuously over medium-low heat until the sauce clings to the pasta and the noodles are al dente, about 1 to 2 minutes.

Remove the skillet from the heat. Add the remaining 1 tablespoon olive oil, parsley, basil, and lemon juice. Toss to combine, then season with salt and freshly ground black pepper.
