Ingredients
- 500 g Peas (frozen, thawed)
- 120 g Pine Nuts (toasted)
- 0.5 bunch Fresh Basil
- 3 Garlic cloves (peeled)
- 6 tbsp Lemon juice
- 60 g Parmesan (can be vegan)
- 2.5 dl Canola oil
- Salt (a pinch, plus more to taste)

If you haven't already, toast the pine nuts in a dry pan over medium heat for 2-3 minutes until golden and fragrant, then let them cool.

Measure the thawed peas, toasted pine nuts, fresh basil, peeled garlic cloves, lemon juice, parmesan cheese, and canola oil into a blender or food processor.

Process the mixture until it reaches your desired pesto consistency, ranging from slightly chunky to completely smooth.

Add a pinch of salt, taste the pesto, and adjust the seasoning with more salt or lemon juice if needed.
Notes
This pesto can be used as a pasta sauce, a spread for sandwiches, or a dip for vegetables. If using vegan parmesan, ensure it is a hard, salty variety for the best flavor profile.
