  • 1 lb dry red kidney beans (soaked overnight and drained)
  • 12 oz andouille sausage (divided: one link sliced into rounds, the other quartered)
  • 1 onion (chopped)
  • 3 stalks celery (chopped)
  • 1 green bell pepper (chopped)
  • 3 cloves garlic (minced)
  • 4 cup chicken broth (low sodium preferred)
  • 2 cup water
  • 1 tbsp Worcestershire sauce (referred to as 'W sauce')
  • 1 tsp chili powder
  • salt (to taste)
  • 3 cup long grain white rice (cooked, for serving)

    Prepare the red kidney beans by soaking them in water overnight. Drain and rinse before using. If you forgot to soak overnight, use a quick-soak method by boiling the beans for 5 minutes and letting them sit for 1 hour.

    Prepare the andouille sausage by slicing one link into rounds and cutting the second link into quarters for varied texture.

    Add the soaked and drained beans, chopped vegetables, minced garlic, and sliced sausage into the crockpot.

    Pour in 4 cups of chicken broth and 2 cups of water to the crockpot. This provides the 6 cups of total liquid needed for the beans to cook properly.

Notes

For extra smoky flavor, you can substitute or add a smoked turkey leg or a ham hock to the crockpot. The author recommends a specific blend of 4 cups broth and 2 cups water, but you can use 6 cups of all broth if preferred. Ensure beans are fully submerged in liquid before starting.
