Ingredients

  • 6 Mini cucumbers (sliced into rounds or half-moons)
  • 2 Avocados (ripe, cut into cubes)
  • 3 Green onions (finely chopped (scallions))
  • 0.25 cup Fresh cilantro (chopped)
  • 2 tbsp Olive oil (extra virgin)
  • 2 tbsp Lime juice (fresh (approximately 1 lime))
  • 0.5 tsp Red pepper flakes (adjust to taste for spiciness)
  • Salt (to taste)

Steps

  1. 1

Wash and dry the mini cucumbers. Cut them into thin slices or half-moons and place them in a large salad bowl.

  2. 2

Cut the avocados in half, remove the pit, and cut the flesh into bite-sized cubes. Add them to the bowl with the cucumbers.

  3. 3

Finely chop the green onions and fresh cilantro. Add them to the bowl.

  4. 4

In a small jar or separate bowl, whisk together the olive oil, lime juice, red pepper flakes, and salt to create the dressing.

  5. 5

Pour the dressing over the salad ingredients.

  6. 6

Gently toss all the ingredients so that the avocado stays creamy without becoming mashed.

  7. 7

Serve immediately to enjoy the best texture and freshness.

Notes

Pro tip: Toss gently so that the avocado maintains its shape and provides creaminess without falling apart. Consumption on the same day is recommended, as avocado tends to oxidize and change its flavor by the next day.
