Chocolate Chunk Banana Pancakes

- 1 egg
- 2 ripe bananas (small, very ripe)
- 180 ml buttermilk
- 20 g butter (melted)
- 1 tsp vanilla extract
- 160 g flour (all-purpose)
- 1 tsp baking powder
- 0.25 tsp baking soda
- salt (pinch)
- 90 g chocolate chunks (plus extra for serving)
- butter (for greasing the pan and serving)
- maple syrup (for serving)
Steps

Mash the small ripe bananas in a bowl until they are mostly smooth.

In a mixing bowl, whisk together the egg, buttermilk, vanilla extract, and the mashed bananas.

Add the flour, baking powder, baking soda, and salt to the wet mixture. Fold gently until just combined, being careful not to overmix.

Fold in the 20g of melted butter, followed by the 90g of chocolate chunks.

Let the batter rest for a few minutes to ensure extra fluffy pancakes.

Heat a buttered pan over low-medium heat. Cook spoonfuls of batter until bubbles begin to form on the surface.

Optional: Add extra chocolate chunks on top of the pancakes while they are cooking on the first side for a bakery-style look.

Notes
Don’t overmix the batter or the pancakes can turn dense. Cook on lower heat for evenly golden pancakes. Use very ripe bananas for the best flavor and sweetness.
