Ingredients
- 8 slices bacon (thick-cut, chopped)
- 2 russet potatoes (peeled and diced into 1/2-inch cubes)
- 1 tsp kosher salt (divided)
- 0.5 tsp black pepper
- 0.5 tsp onion powder
- 0.5 tsp garlic powder
- 8 eggs (large)
- 2 tbsp whole milk
- 1 tbsp unsalted butter
- 4 flour tortillas (10-inch (burrito size))
- 1 cup cheddar cheese (shredded)
- 1 avocado (sliced)
- 0.5 cup salsa (for serving)

In a large skillet over medium heat, add the chopped bacon. Cook, stirring occasionally, until the bacon is crispy and the fat has rendered, about 8-10 minutes.

Use a slotted spoon to remove the crispy bacon from the skillet and transfer it to a paper towel-lined plate to drain. Leave about 2-3 tablespoons of bacon fat in the skillet, discarding any excess.

Add the diced potatoes to the skillet with the bacon fat. Season with 1/2 teaspoon of salt, black pepper, onion powder, and garlic powder.

Cook the potatoes over medium heat, stirring occasionally, until they are golden brown and tender, about 10-12 minutes. Remove the potatoes from the skillet and set aside.

In a medium bowl, whisk together the eggs, milk, and the remaining 1/2 teaspoon of salt until well combined and slightly frothy.

Wipe out the skillet or use a clean non-stick pan. Melt the butter over medium-low heat. Pour in the egg mixture.

Cook the eggs, gently pushing them across the pan with a spatula to form large, soft curds. Remove from heat when the eggs are just set but still moist.

Warm the tortillas in a dry skillet or microwave for 15 seconds until pliable.

To assemble, lay a tortilla flat. Place a portion of the scrambled eggs in the center, followed by the crispy potatoes, bacon, shredded cheese, and avocado slices.

Fold the sides of the tortilla inward over the filling, then roll tightly from the bottom up to form a burrito.

Optional: Place the assembled burritos back in the skillet over medium heat for 1-2 minutes per side until the tortilla is toasted and the cheese is fully melted. Serve with salsa.
Notes
To freeze: Let the burritos cool completely, wrap tightly in foil, and place in a freezer bag. Reheat in the oven at 350°F for 20 minutes or in the microwave for 2-3 minutes.
