  • 8 slices bacon (chopped)
  • 16 oz rotini pasta (1 box)
  • salt (for salting the pasta water; use approximately 1 teaspoon)
  • 2 chicken breasts (cut into bite-sized pieces)
  • garlic powder (to taste; estimated 1 teaspoon)
  • Italian seasoning (to taste; estimated 1 teaspoon)
  • smoked paprika (to taste; estimated 1 teaspoon)
  • garlic and herb seasoning (to taste; estimated 1 teaspoon)
  • onion powder (to taste; estimated 1 teaspoon)
  • red pepper flakes (to taste; estimated 1/4 teaspoon)
  • black pepper (to taste; estimated 1/2 teaspoon)
  • 2 tbsp butter
  • 1 cup chicken broth
  • 2 cups heavy whipping cream
  • 0.5 cup reserved pasta water (reserved before draining the pasta)
  • 8 oz cream cheese (1 block)
  • 1 packet ranch seasoning mix
  • 1 cup medium cheddar cheese (shredded)
  • 1.5 cups Mexican-blend cheese (shredded)

Steps

    Chop the bacon and cut the chicken breasts into bite-sized pieces. Measure the seasonings, cheeses, cream cheese, broth, and ranch seasoning so everything is ready before cooking.

    Heat a large skillet over medium-high heat. Add the chopped bacon and cook until browned and crisp, about 6–8 minutes, stirring occasionally so it cooks evenly.

    Remove the crispy bacon from the skillet with a slotted spoon and set it aside. Leave about 2 tablespoons of bacon drippings in the skillet, carefully spooning or pouring off the excess.

    Return the skillet to the heat and add the butter. Let it melt completely, scraping up any flavorful browned bits from the bottom of the pan.
