A refreshing and slightly spicy agua fresca made with sweet pineapple, cucumber, fresh ginger, honey, and a touch of salt. Ideal for hot days and best served ice-cold with ice.

Ingredients

  • 500 ml Purified water (For blending the fruit)
  • 0.25 cup Sugar (Or sweetener to taste)
  • 1 tbsp Honey
  • 2 cup Pineapple (Cut into pieces)
  • 1 cup Cucumber (Cut into pieces; may be peeled if desired)
  • Fresh ginger (To taste; the author recommends using enough to appreciate its flavor)
  • Salt (A very small pinch)
  • Additional purified water (As needed to dilute the concentrate to the desired intensity and consistency)

Steps

    Wash and sanitize the pineapple, cucumber, and ginger. Cut the pineapple and cucumber into small pieces to make blending easier; peel the ginger if desired.

    Place the 500 ml of purified water, pineapple, cucumber, ginger to taste, and the pinch of salt in a blender. Blend until completely smooth.

    Add the sugar and honey to the blender. Blend again until the sugar dissolves and the drink is well combined.

    Taste the concentrate and adjust the sweetness or amount of ginger according to your preference.

    Strain the mixture through a fine-mesh strainer if you prefer a lighter drink without pulp. If you like more texture, you can skip this step.

    Transfer the concentrate to a pitcher and add more purified water until it reaches the desired intensity. Mix well.

    Serve immediately with ice or refrigerate until thoroughly chilled.

Notes

The original recipe leaves the amounts of ginger and additional water to taste. It also allows the sugar to be replaced with another sweetener. Keep the drink refrigerated and preferably consume it within a maximum of 2 days; stir before serving.
