Weights are estimates. Together, the ingredients weigh about 135 g before cooking, which is about 35 g per serving.
Steps
Peel the pearl onions and set them aside to prepare the pakoras.
In a bowl, combine the besan, cornstarch, dried fenugreek leaves, turmeric, ground cumin, ground coriander, nigella seeds, and crushed red pepper flakes. Season with salt and red chili powder to taste.
Gradually add the sparkling water to the flour and spice mixture, stirring until a thin batter forms that lightly coats the onions.
Heat the frying oil. Dip the pearl onions into the batter and coat them evenly.
Fry the coated onions until golden and crispy. Remove them from the oil and drain before serving.
Notes
The source provides the ingredients but does not specify the quantity of onions, the exact amount of sparkling water, or the frying temperature or time. These details were estimated solely to make the recipe possible to prepare. The interpretation of “1 tsp ground cumin, ground coriander & nigella seeds” as 1 teaspoon of each spice is uncertain.
