Ingredients

  • 1.5 lb prepared breaded chicken tenders (cut into 1 1/2-inch strips)
  • 3 cup coleslaw mix
  • 3 green onions (chopped)
  • 0.25 cup cilantro (chopped)
  • 0.5 cup stir fry sauce (or Asian salad dressing, plus more if desired)
  • 0.5 cup roasted peanuts (chopped)
  • 8 flour tortillas (8-inch)

Steps

  1. 1

Slice the prepared breaded chicken tenders into 1 1/2-inch strips and set them aside.

  2. 2

In a large bowl, combine the coleslaw mix, chopped green onions, chopped cilantro, stir fry sauce (or Asian salad dressing), and chopped roasted peanuts.

  3. 3

Toss the mixture until the coleslaw mix is well coated with the sauce.

  4. 4

Place one 8-inch flour tortilla on a flat work surface.

  5. 5

Place a few strips of the chicken in the center of the tortilla and top with a portion of the slaw mixture.

  6. 6

Fold the ends of the tortilla towards the center and roll tightly to form a wrap.

  7. 7

Repeat the assembly process with the remaining tortillas, chicken, and slaw.

  8. 8

Cut each wrap in half, securing with a toothpick if needed, and place on a platter to serve.

Notes

The recipe uses pre-prepared breaded chicken tenders, making this a very fast assembly-only meal. You can use store-bought frozen tenders that have been cooked according to package directions, or leftover tenders.
