Ingredients
- 200 g Pork belly or lean pork (thinly sliced)
- 150 g Smoked tofu (Dougan) (sliced into strips)
- 100 g Garlic sprouts (Suan Miao) (cut into sections)
- 5 g Ginger (sliced)
- 2 cloves Garlic (sliced)
- 3 Dried chili peppers (optional, for heat)
- 1 tbsp Light soy sauce
- 0.5 tsp Dark soy sauce (for color)
- 1 tsp Oyster sauce
- 1 tbsp Cooking oil
- Salt (to taste)

Prepare the ingredients: slice the pork thinly, cut the smoked tofu into strips, and chop the garlic sprouts into 2-inch sections. Slice the ginger and garlic.

Heat a wok or large skillet over medium-high heat and add a small amount of cooking oil.

Add the pork slices to the wok and stir-fry until the fat renders out and the edges become slightly golden and crispy.

Add the sliced ginger, garlic, and dried chili peppers to the wok. Stir-fry until fragrant.

Add the sliced smoked tofu to the wok. Stir-fry for 1-2 minutes to allow the tofu to absorb the flavors and heat through.

Season with light soy sauce, dark soy sauce (for color), and oyster sauce. Toss well to coat all ingredients evenly.

Add the garlic sprout sections to the wok. Stir-fry quickly over high heat for about 1 minute until the sprouts are bright green and just tender-crisp.

Taste and add a pinch of salt if necessary. Give it a final quick toss and serve immediately with steamed rice.
Notes
For the best flavor, use pork belly to provide natural lard for frying. If using very lean pork, you may need slightly more cooking oil. Do not overcook the garlic sprouts; they should remain crunchy.
