Chilled noodles are topped with quickly stir-fried zucchini and a bold dressing of maple syrup, soy sauce, fish sauce, and garlic powder. Salting the zucchini first preserves its texture, while ice rapidly cools the dish and mellows the dressing as it melts.

Weights are estimates. Together, the ingredients weigh about 440 g before cooking, which is about 440 g per serving.

Steps

  1. Trim the tips from the zucchini. Halve it lengthwise, then slice it into ⅓-inch half moons. Sprinkle the slices directly on the cutting board with ½ teaspoon salt, toss to combine, and let them stand for at least 10 minutes and up to 30 minutes to draw out excess moisture.

  2. Meanwhile, bring a pot of water to a boil. Cook the noodles according to the package instructions.

  3. Drain the noodles, then rinse them under cold water until they feel cool to the touch. Transfer them to an individual serving bowl.

  4. In a medium bowl, stir together the maple syrup, soy sauce, fish sauce, and garlic powder. Set the dressing aside.

  5. Pat the zucchini dry. Heat a large skillet over high heat, then add the oil.

  6. When the oil gives off a wisp of smoke, carefully arrange the zucchini in an even layer in the skillet and season it with salt.

  7. Cook the zucchini undisturbed until browned on one side, 1 to 2 minutes. Flip the pieces and cook until tender-crisp, about 1 minute.

  8. Transfer the zucchini to the bowl with the dressing. Add the ice and quickly toss a few times until the zucchini is cool.

  9. Taste the dressing and add more salt if needed. It should taste boldly salty at this stage because the melting ice and noodles will dilute it.

  10. Pour the zucchini and its dressing over the noodles. Spritz with lemon or lime, top with the sliced scallions, and eat immediately.

  11. As you eat, add more maple syrup, soy sauce, or fish sauce if desired.

Notes

The source notes that toasted sesame seeds, furikake, or shichimi togarashi may be sprinkled over the dish at the table, but does not include them in the authoritative ingredient list. The source does not specify a noodle type beyond dried ramen, somen, or capellini, nor an exact amount of serving garnish.
