Creamy Garlic Parmesan Pasta

Ingredients
- 1 lb fettuccine pasta
- 4 tbsp unsalted butter (divided)
- 4 garlic (cloves, minced)
- 2 cup heavy cream
- 1 cup parmesan cheese (freshly grated)
- salt (to taste)
- black pepper (to taste)
- 2 tbsp fresh parsley (chopped, for garnish)

Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package directions until al dente.

While the pasta cooks, melt 2 tablespoons of butter in a large skillet over medium heat.

Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Pour in the heavy cream and bring to a gentle simmer. Let it cook for 3-5 minutes until slightly thickened.

Stir in the remaining 2 tablespoons of butter and the grated parmesan cheese. Whisk constantly until the cheese is melted and the sauce is smooth.

Season the sauce with salt and black pepper to taste.

Drain the pasta, reserving a small amount of pasta water. Add the cooked fettuccine directly into the skillet with the sauce.

Toss the pasta thoroughly to coat every strand in the sauce. If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency.

Garnish with fresh chopped parsley and extra parmesan if desired, and serve immediately.
Notes
For the best results, use freshly grated parmesan cheese rather than the canned variety, as it melts much smoother into the sauce. You can add grilled chicken or shrimp to make this a more filling main course.
