One-Pan Creamy Bacon and Spinach Gnocchi

Ingredients
- 12 oz bacon (chopped small)
- 1 onion (diced)
- 2 tbsp minced garlic
- 1 package gnocchi (standard 16 oz or 17.5 oz shelf-stable or refrigerated package)
- 1 handful spinach (fresh)
- 0.75 cup chicken broth
- 0.5 cup heavy cream (can substitute with half and half)
- 5.2 oz Boursin cheese (one standard package; can substitute with 1 cup Parmesan cheese)

Chop 12 ounces of bacon into small pieces.

Add the chopped bacon to a large skillet and cook over low to medium heat until it becomes nice and crispy.

When the bacon is about halfway cooked, add one diced onion to the skillet. Continue tossing and cooking.

Drain most of the bacon grease from the pan, leaving a small amount behind for flavor and cooking.

Add 2 tablespoons of minced garlic to the pan and toss around until fragrant.

Add the whole package of gnocchi to the skillet. Toss and cook for 5 to 10 minutes until the gnocchi are slightly golden.

Add a handful of fresh spinach to the pan and toss to combine.

Pour in 3/4 cup of chicken broth and 1/2 cup of heavy cream.

Add the Boursin cheese (or 1 cup of Parmesan cheese if preferred) to the skillet.

Continue tossing and stirring until the cheese is melted, the sauce is smooth, and it has thickened slightly.
Notes
The author suggests that if you don't have Boursin cheese, you can substitute it with approximately 1 cup of Parmesan cheese. Cooking the bacon on low to medium heat is recommended for maximum crispiness.
