A low-carb version of eggs Benedict that replaces the English muffin with half a firm avocado. It is topped with turkey ham or smoked salmon, a poached egg, and hollandaise sauce made with clarified butter, lemon, and Dijon mustard.

Ingredients

  • 0.5 Firm ripe avocado (Use half an avocado as the base, keeping it whole and firm.)
  • 60 g Starch-free turkey ham (Alternatively, use a similar amount of smoked salmon.)
  • 1 Egg (For poaching.)
  • 1 L Water (Approximate amount, enough to poach the egg.)
  • 1 tbsp White vinegar (A splash for the poaching water.)
  • 2 Egg yolks (For the hollandaise sauce.)
  • 0.5 Lemon (Squeeze to obtain the juice.)
  • 1 tsp Dijon mustard
  • 60 g Clarified butter (Melted slowly.)
  • Black pepper (To taste, for garnishing.)
  • Paprika (To taste, for garnishing.)

Steps

    Prepare the base by placing half a ripe, firm, peeled avocado on the plate, with the cavity facing upward or positioned securely.

    Place the starch-free turkey ham or smoked salmon on top of the avocado.

    Bring enough water to a boil in a saucepan and add a splash of white vinegar.

    When the water boils, reduce the heat to maintain a gentle simmer. Stir the water with a spoon to create a whirlpool.

    Crack the egg into the center of the whirlpool and cook it for exactly 3 minutes, until the white is set and the yolk remains completely runny.

    Remove the poached egg with a slotted spoon and drain it briefly to remove excess water.

    Place the poached egg on top of the avocado and turkey ham or smoked salmon.

    For the hollandaise, melt the clarified butter slowly and keep it warm, without letting it smoke.

    In a heatproof bowl, whisk the two egg yolks with the juice of half a lemon and the Dijon mustard over a very low-heat bain-marie.

    Gradually add the clarified butter in a thin stream while whisking continuously. Continue whisking for 3-4 minutes, until the sauce thickens and becomes smooth.

    Pour the hollandaise sauce over the poached egg.

    Finish with black pepper and paprika to taste, and serve immediately while the yolk and sauce are hot and fluid.

Notes
