Ingredients
- 6 oz chicken breast (diced into small bite-sized pieces)
- 0.5 cup zucchini (diced)
- 0.25 cup onion (diced)
- 0.5 cup cooked white rice (day-old or pre-cooked)
- 1 tbsp soy sauce (low sodium preferred)
- garlic powder (to taste)
- ginger powder (to taste)
- 1 tsp olive oil (for sautéing)
- 1 tbsp yum yum sauce (for drizzling)
Steps
- 1
Heat olive oil in a large skillet or wok over medium-high heat.
- 2
Add the diced chicken breast to the pan and season with garlic powder and ginger powder. Sauté until the chicken is cooked through and slightly browned, about 3-4 minutes.
- 3
Add the diced zucchini and onion to the skillet with the chicken. Continue to sauté for another 2-3 minutes until the vegetables are tender-crisp.
- 4
Stir in the cooked white rice and soy sauce. Toss everything together for 1-2 minutes until the rice is heated through and well-coated in the sauce.
- 5
Remove from heat and serve immediately, drizzled with yum yum sauce.
Notes
You can easily swap the chicken for steak or shrimp. This recipe is designed for a single serving but can be doubled or tripled for meal prep throughout the week.
