Creamy One-Pot Chicken Gnocchi Soup

Ingredients
- 1.5 lb chicken breast (seasoned and cooked, then chopped or shredded)

- black pepper (to taste)
- garlic powder (to taste)
- cayenne pepper (to taste)
- red pepper flakes (to taste)
- dried thyme (to taste)
- dried oregano (to taste)
- dried basil (to taste)
- 1 shallot (large, finely diced)
- 4 clove garlic (crushed and roughly chopped)
- 3 tbsp olive oil (divided)
- 1 tbsp tomato paste (a little bit)
- 0.5 cup sun-dried tomatoes (chopped)
- 6 cup chicken stock (a whole lot)
- 1 cup heavy cream
- 0.5 cup parmesan cheese (freshly grated)
- 2 tbsp unsalted butter (cold)
- 16 oz gnocchi (shelf-stable or fresh)
- 2 cup fresh spinach (a handful)

Generously season the chicken breasts with salt, pepper, garlic powder, cayenne pepper, red pepper flakes, thyme, oregano, and dried basil. Ensure the chicken is heavily coated.

Finely dice a large shallot. Crush and roughly chop the garlic cloves.

In a heavy-bottomed pot over medium-high heat, add a generous amount of olive oil.

Carefully lay the chicken into the pot. Do not overcrowd; cook in batches if necessary.

Once the chicken is fully cooked, remove it from the pot and either chop or shred it. Set aside.

Add a little more olive oil to the same pot, then add the chopped garlic and shallots.

Squeeze in a little bit of tomato paste and add the sun-dried tomatoes. Sauté for a few minutes.

Pour in the chicken stock. Let the mixture simmer for about 15 minutes.

Add the heavy cream and a good amount of freshly grated parmesan cheese.

Continue to simmer for about 20 minutes to allow the soup to thicken.

Taste and add salt if needed. Add the cold butter, the cooked chicken, the gnocchi, and a handful of spinach.

Cover the pot and let it cook for 5 more minutes until the gnocchi is tender and the spinach has wilted.
Notes
