Ingredients

  • 1 lb leftover chicken (shredded (rotisserie or home-cooked))
  • 1 white onion (sliced into half-moons)
  • 2 garlic cloves (minced)
  • 3 chipotle peppers in adobo (plus 2 tablespoons of the sauce from the can)
  • 14.5 oz fire-roasted tomatoes (one standard can)
  • 0.5 cup chicken broth
  • 1 tbsp vegetable oil (for sautéing)
  • salt (to taste)
  • black pepper (to taste)

Steps

    Shred your leftover chicken into bite-sized pieces and set aside.

    In a blender or food processor, combine the fire-roasted tomatoes, chipotle peppers, adobo sauce, and chicken broth. Blend until smooth.

    Heat the vegetable oil in a large skillet over medium heat. Add the sliced onions and sauté until they become soft and translucent, about 5 minutes.

    Add the minced garlic to the skillet and cook for another 60 seconds until fragrant.

    Pour the blended tomato-chipotle sauce into the skillet with the onions and garlic. Bring to a simmer.

Notes
