Ingredients
- 1 Onion (Finely diced)
- 3 Garlic cloves (Grated)
- 3 Bell peppers (Thinly sliced)
- 1 tbsp Ground coriander
- 1 tbsp Ground cumin
- 2.5 tbsp Chipotle paste (Add a little more if you prefer a hotter result; spice level varies by brand)
- 1 tbsp Tomato purée
- 300 ml Chicken stock
- 12 Boneless skinless chicken thighs (Use whole)
- Olive oil (A drizzle)
- Salt (To season, then to taste)
- Black pepper (To season)
- Water (A splash, if you want the sauce thinner)
Steps
- 1
Finely dice the onion, grate the garlic, and thinly slice the bell peppers.
- 2
Set a large, shallow casserole dish over medium heat and add a drizzle of olive oil.
- 3
Add the onion and bell peppers. Cook for 5–7 minutes, until softened.
- 4
Add the garlic, ground coriander, ground cumin, chipotle paste, and tomato purée. Cook for 2 minutes, until fragrant and slightly darkened. Chipotle paste varies in heat by brand; add a little more if you like a hotter dish.
- 5
Add the whole chicken thighs to the pan and pour in the chicken stock. Season with salt and black pepper.
- 6
Bring the mixture to a boil, cover with a lid, and cook at a high simmer for 15 minutes.
- 7
Remove the lid and cook for a further 15–20 minutes, or until the chicken is tender and the sauce has thickened slightly and looks glossy. For more than 6 portions, cooking will take longer. The sauce may seem quite loose; the shredded chicken will absorb much of the liquid.
- 8
Use two forks to shred the chicken directly in the pan.
- 9
Stir the shredded chicken and vegetables together until everything is coated in the smoky sauce. Add a splash of water if you want it saucier, or let the sauce reduce further for a thicker result.
- 10
Taste and adjust the seasoning with salt.
- 11
To prepare ahead, let the chicken cool to room temperature, then spoon it into a container and refrigerate until needed.
Notes
Serve in tacos, rice bowls, or toasties. The source gives no specific reheating instructions. The quantity for a drizzle of olive oil and the optional splash of water is not specified.
