Creamy Lemon Chicken Orzo

Ingredients
- 2 tbsp olive oil
- 1 lb chicken breast (cut into small cubes)
- 1 tbsp Italian seasoning blend (or any seasoning you love)
- 2 tbsp black pepper (adjust to taste)
- 1 onion (diced)
- 1 cup sun-dried tomatoes (chopped)
- 1 tbsp garlic (minced)
- 3 cup orzo pasta (uncooked)
- 3 cup chicken broth
- 2 lemons (juiced)
- 4 tbsp fresh basil (chopped)
- 2 handful baby spinach
- 1.5 cup heavy cream
- 1 cup Parmesan cheese (grated)

Warm a large pan over medium heat and add the olive oil.

Add the cubed chicken breast to the pan. Season with your favorite seasoning blend and the black pepper.

Mix well and cook until the chicken is browned and cooked through.

Add the diced onion to the chicken. Stir and cook for about 3 minutes until the onion begins to soften.

Stir in the chopped sun-dried tomatoes and cook for another 3 minutes.

Add the minced garlic, give it a quick mix, and cook until fragrant (about 30 seconds).

Pour in the uncooked orzo and chicken broth. Stir to combine.

Squeeze in the juice from both lemons and mix again.

Sprinkle the fresh basil over the mixture, cover the pan, and let it cook for 10 minutes.
