Ingredients

  • 3 lb Lean Steak (Top Round) (raw)
  • 2 cup Jasmine Rice (dry)
  • 3 cup Frozen Mixed Veggies
  • 6 Whole Eggs (scrambled)
  • 3 tbsp Soy Sauce
  • 1 tbsp Rice Vinegar
  • 1 tbsp Honey
  • 2 tsp Sesame Oil
  • 1 tbsp Light Butter
  • 2 tbsp Minced Garlic
  • 1 tbsp Garlic Powder
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 0.75 cup 0% Greek Yogurt
  • 0.333 cup Light Mayo
  • 1.5 tbsp Ketchup
  • 1 tbsp Rice Vinegar (for sauce)
  • 1 tsp Garlic Powder (for sauce)
  • 1 tsp Onion Powder
  • 0.5 tsp Smoked Paprika
  • 0.5 tsp Black Pepper (for sauce)
  • 1 tbsp Water (1-2 tbsp to reach desired consistency)

Steps

    Place the 3 lbs of lean steak (top round) into the crockpot.

    Add the soy sauce, rice vinegar, honey, light butter, minced garlic, garlic powder, salt, and black pepper to the crockpot with the steak.

    Cover and cook on low for 5–6 hours or on high for 2–3 hours.

    While the steak is cooking, cook the 2 cups of dry jasmine rice according to package instructions and scramble the 6 eggs. Set both aside.

    Prepare the Yum Yum sauce by mixing the Greek yogurt, light mayo, ketchup, rice vinegar, garlic powder, onion powder, smoked paprika, black pepper, and 1–2 tablespoons of water in a bowl until smooth. Store in a squeeze bottle if preferred.

    Once the steak is finished cooking, add the cooked rice, frozen mixed veggies, sesame oil, and scrambled eggs to the crockpot.

    Mix everything well until the vegetables are warmed through and the ingredients are evenly distributed.

    Divide the mixture into 8 equal servings (approximately 1/8 of the crockpot each).

    Serve immediately with the Yum Yum sauce drizzled on top, or store in meal prep containers for later. Reheat before adding the sauce.

Notes

The author suggests keeping the Yum Yum sauce separate when meal prepping; microwave the rice and steak portion first, then add the cold sauce on top for the best flavor bomb experience.
