Ingredients
- 12 oz pasta (such as penne or rotini)
- 2 cup cooked chicken (pre-cooked, rotisserie, or freshly cooked; shredded or diced)
- 1 cup sour cream
- 0.5 cup chicken broth (or pasta water to thin the sauce)
- 1 tbsp dried shallots
- 1 tsp smoked paprika
- 1 tsp roasted garlic powder
- salt and pepper (to taste)
- fresh parsley (for garnish)
Steps
- 1
Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente.
- 2
While the pasta cooks, prepare the chicken by shredding or dicing it if using pre-cooked or rotisserie chicken.
- 3
In a large skillet or saucepan over medium-low heat, combine the sour cream, chicken broth, dried shallots, smoked paprika, and roasted garlic powder.
- 4
Whisk the sauce ingredients together until smooth and heated through, being careful not to let the sour cream boil vigorously to prevent curdling.
- 5
Add the cooked chicken to the sauce and stir to coat, allowing it to warm through for 2-3 minutes.
- 6
Drain the pasta, reserving a small amount of pasta water if a thinner sauce consistency is desired.
- 7
Toss the cooked pasta into the skillet with the creamy chicken sauce until every piece is well-coated.
- 8
Season with salt and pepper to taste and garnish with fresh parsley before serving.
Notes
Using a rotisserie chicken makes this a very fast weeknight meal. If the sauce is too thick, add a splash of pasta water or extra chicken broth until it reaches your preferred consistency.
