- 3 cloves garlic (roughly chopped)
- 1 inch fresh ginger (grated)
- 2 green onions (diced, whites and greens separated)
- 2 tbsp soy sauce
- 1 tbsp black vinegar (Chinkiang vinegar)
- 1 tsp sugar
- 1 tbsp gochugaru (Korean chili flakes; can substitute regular chili flakes)
- 1 tsp sesame seeds
- 2 tbsp neutral cooking oil (referred to as food lube)
- 0.5 lb ground pork
- salt (to taste)
- 8 oz noodles (wheat or ramen-style noodles, cooked according to package instructions)

Prepare the aromatics: roughly chop the garlic, grate the ginger, and dice the green onions, keeping the white parts and green parts separate.

In a small bowl, whisk together the soy sauce, black vinegar, sugar, gochugaru (or regular chili flakes), and sesame seeds to create the sauce.

Add a good amount of cooking oil to a hot pan or wok over medium-high heat.

Add the chopped garlic, grated ginger, and the white parts of the green onions to the pan.

Sauté the aromatics until they become nice and fragrant.

Add the ground pork to the pan, seasoning with a little bit of salt.

Cook the pork, breaking it up with a spatula, until it is nicely browned.

Pour in the prepared sauce mixture and cook for about one minute to let the flavors meld.

Add the cooked noodles to the pan and toss thoroughly to coat them in the sauce and pork mixture.

Notes
If gochugaru is unavailable, standard red chili flakes can be used as a substitute. The creator refers to cooking oil as 'food lube'.
