Ingredients

  • 0.5 lb pork belly (sliced into bite-sized pieces, not too thick)
  • 3 garlic (cloves, finely diced)
  • 1 shallot (finely diced)
  • salt (to taste)
  • 2 tbsp butter (unsalted preferred for browning)
  • 1 tbsp miso paste (author recommends Onsale brand)
  • 1 tsp soy sauce (a little bit)
  • 8 oz noodles (fresh noodles or ramen style)
  • 0.5 lemon juice (a small squeeze to finish)

Steps

    Finely dice the garlic and shallot.

    Add the pork belly to a cold pan. Season with a little bit of salt.

    Turn the heat to medium and let the pork belly slowly render out its fat. Cook until it starts to get crispy.

    Carefully remove the crispy pork belly from the pan and set aside, leaving some of the rendered fat if desired or wiping the pan.

    Add the butter to the pan, followed closely by the diced garlic and shallots.

    Let the mixture cook over medium heat until the butter is nicely browned and fragrant.

    Add the miso paste and a little bit of soy sauce. Mix together until well combined.

    Remove the sauce from the heat and set aside.

    Bring a pot of water to a boil and cook your noodles according to package instructions.

    Ladle a little bit of the starchy noodle water into the miso butter sauce.

Notes

The author suggests using 'Onsale' brand miso. Starting the pork belly in a cold pan helps render the fat more effectively without burning the meat.
