Ingredients

  • 2 cup sweet potatoes (about 2 medium sized sweet potatoes, cooked and mashed)
  • 0.25 cup milk (plant-based milk for vegan option)
  • 0.5 cup maple syrup (can also use agave)
  • 1.5 cup oat flour (blitz up oats, use gluten-free if needed)
  • 0.5 cup cocoa powder (unsweetened)
  • 2 tsp bicarbonate of soda
  • 0.5 cup chocolate chips (optional; use vegan chips if needed)

Steps

    Preheat your oven to 180°C (350°F).

    Cook the sweet potatoes by either microwaving or boiling them until soft.

    Remove the skins from the cooked sweet potatoes and blitz the flesh in a blender or food processor until completely smooth.

    In a large mixing bowl, combine the smooth sweet potato puree, milk, and maple syrup. Mix until well incorporated.

    Add the oat flour, cocoa powder, bicarbonate of soda, and vegan chocolate chips to the wet mixture.

    Mix all ingredients together well until a uniform batter forms.

    Transfer the batter into a prepared (greased or lined) cake pan.

    Bake in the preheated oven for 35 minutes, or until a toothpick inserted into the center comes out clean.

Notes

The 'secret ingredient' is sweet potato, which provides moisture and texture without a vegetable taste. For the oat flour, you can simply blend dry oats in a high-speed blender until they reach a flour-like consistency.
