Ingredients
- 2 cup sweet potatoes (about 2 medium sized sweet potatoes, cooked and mashed)
- 0.25 cup milk (plant-based milk for vegan option)
- 0.5 cup maple syrup (can also use agave)
- 1.5 cup oat flour (blitz up oats, use gluten-free if needed)
- 0.5 cup cocoa powder (unsweetened)
- 2 tsp bicarbonate of soda
- 0.5 cup chocolate chips (optional; use vegan chips if needed)
Steps
- 1
Preheat your oven to 180°C (350°F).
- 2
Cook the sweet potatoes by either microwaving or boiling them until soft.
- 3
Remove the skins from the cooked sweet potatoes and blitz the flesh in a blender or food processor until completely smooth.
- 4
In a large mixing bowl, combine the smooth sweet potato puree, milk, and maple syrup. Mix until well incorporated.
- 5
Add the oat flour, cocoa powder, bicarbonate of soda, and vegan chocolate chips to the wet mixture.
- 6
Mix all ingredients together well until a uniform batter forms.
- 7
Transfer the batter into a prepared (greased or lined) cake pan.
- 8
Bake in the preheated oven for 35 minutes, or until a toothpick inserted into the center comes out clean.
Notes
The 'secret ingredient' is sweet potato, which provides moisture and texture without a vegetable taste. For the oat flour, you can simply blend dry oats in a high-speed blender until they reach a flour-like consistency.
