Weights are estimates. Together, the ingredients weigh about 825 g before cooking, which is about 275 g per serving.

Steps

  1. Cut the pork tenderloin crosswise on a diagonal into ¼-inch-thick slices.

  2. In a medium bowl, whisk together the hoisin sauce, water, honey, oil, garlic, ginger, chile-garlic sauce, and a few grinds of black pepper.

  3. Reserve ¼ cup of the marinade.

  4. Add the pork slices to the medium bowl with the remaining marinade and stir to coat all sides.

  5. Cover the bowl and refrigerate the pork for at least 1 hour and up to overnight.

  6. When ready to cook, heat a grill or grill pan to medium-high.

  7. Grill the pork slices until charred and cooked to 145°F (63 °C) for medium-rare, about 3 minutes per side.

  8. Transfer the grilled pork to a serving platter.

  9. While the meat rests for a few minutes, add the reserved marinade, mayonnaise, lime juice, and lime zest to a small bowl.

  10. Whisk the sauce ingredients together to combine.

  11. Taste the sauce and add more salt and pepper if desired.

  12. Serve the grilled pork with the sauce on the side for dipping.

Notes

The recipe states that the marinade can be prepared ahead. Grilled vegetables and steamed rice are suggested accompaniments. The marinade also works well with boneless, skinless chicken thighs. The source's total time includes the marinating period.
