Sweet Potato Goulash with Chorizo

Ingredients

  • 2 Sweet potatoes (peeled, quartered lengthwise and cut into bite-sized pieces)
  • 2 Carrots (peeled, halved lengthwise and cut into thin slices)
  • 120 g Chorizo
  • 2 Onions
  • 1 Red bell pepper
  • 2 Garlic (cloves)
  • 15 g Tomato paste
  • 0.7 L Vegetable broth
  • 2 tsp Sweet paprika powder
  • 1 tsp Cayenne pepper
  • 10 g Fresh parsley
  • Salt (to taste)
  • Pepper (to taste)

Steps

    Prepare all ingredients and set them aside.

    Peel the sweet potatoes and quarter them lengthwise. Then cut into bite-sized pieces.

    Peel the carrots, halve them lengthwise and cut into thin slices.

    Finely chop the onions and garlic. Seed the red bell pepper and cut into cubes. Slice or dice the chorizo.

    In a large pot, sauté the chorizo until it releases its oil. Add the onions, garlic, bell pepper, carrots, and sweet potatoes and sauté briefly.

    Stir in the tomato paste and sauté briefly. Season with sweet paprika powder and cayenne pepper.

    Deglaze with the vegetable broth. Cover and simmer the goulash for about 15-20 minutes until the sweet potatoes and carrots are tender.

    Season with salt and pepper to taste. Chop the fresh parsley and sprinkle it over the goulash before serving.

Notes

The chorizo already provides a lot of fat and seasoning, so be careful when adding salt.
