Ingredients

  • 2 cup Corn (Fresh or thawed; approximately 340 g.)
  • 1 cup Evaporated milk
  • 150 g Cream cheese
  • 3 Eggs (Approximately 150 g without shells.)
  • 0.333 cup Sweetened condensed milk (⅓ cup.)
  • 1 tsp Vanilla extract
  • 1 tbsp Butter (Melted or at room temperature for easy incorporation.)
  • 1 tsp Baking powder
  • Salt (1 pinch.)

Steps

    Preheat the oven to 180 °C. Grease a 12-cup muffin tin with a thin layer of butter or nonstick cooking spray.

    Place the corn, evaporated milk, cream cheese, eggs, sweetened condensed milk, butter, and vanilla in a blender.

    Blend the ingredients until smooth and uniform, with no large pieces of corn. Stop the blender and scrape down the sides if necessary.

    Add the baking powder and pinch of salt to the blended mixture.

    Blend for a few more seconds, just until the baking powder and salt are evenly distributed.

    Pour the mixture into the muffin tin cups, filling each one three-quarters full to leave room for expansion during baking.

    Bake for 25–30 minutes, until the flan bites feel firm to the touch and are lightly golden on the surface.

Notes
