Homemade Chicken Sausage Patties

Ingredients
- 1 lb ground chicken (can also use ground turkey)
- 1 tbsp fresh sage (finely chopped; or 1 tsp dried)
- 1 tsp fresh thyme (finely chopped; or 1/2 tsp dried)
- 1 tsp salt (to taste)
- 0.5 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 0.25 tsp red pepper flakes (adjust for spice preference)
- 0.5 tsp paprika
- 1 tbsp brown sugar (can substitute with maple syrup)
- 2 tbsp water (added to the mixture for moisture)
- 1 tbsp butter (for pan frying; or oil)

Place the ground chicken into a large mixing bowl.

Finely chop the fresh sage and thyme. Add the herbs to the bowl with the chicken. If you do not have fresh herbs, you can use dried, though fresh is recommended for better flavor.

Add the salt, black pepper, garlic powder, onion powder, red pepper flakes, paprika, and brown sugar (or maple syrup) to the bowl.

Pour in a splash of water (about 1-2 tablespoons). Mix everything together until thoroughly combined. The mixture will be quite sticky.

Shape the mixture into small, flat patties. You should be able to get about 8 patties from one pound of meat.

Heat a griddle or large skillet over medium-high heat and add butter or oil to coat the surface.

Place the patties in the hot pan and cook until beautifully browned on the bottom. Flip and cook the other side until browned and the chicken is cooked through (internal temperature of 165°F).

Once the patties are cooked, add a small splash of water to the pan to deglaze it. Swirl the patties in the liquid to pick up all the browned bits and flavor from the bottom of the pan.

Remove from heat and let cool before stacking in an airtight container for storage.
Notes
To meal prep: Store cooked patties in the fridge for up to 4 days or in the freezer for up to 2 months. Reheat in the microwave or a pan for a few seconds before assembling your breakfast sandwich. The author suggests pairing these with square egg patties and cheese on toasted bread.
