Honey Butter Caramelized Croissants
Inspired by Sakimoto Bakery in Osaka, these croissants are dipped in a rich honey butter mixture and baked until they develop a shatteringly crisp, caramelized shell. It is a decadent twist on honey butter toast using buttery croissants instead of milk bread.

Ingredients
- 4 Croissants (cut down the middle (halved lengthwise))
- 4 tbsp Unsalted butter (melted)
- 0.25 cup Brown sugar
- 2 tbsp Honey
- Salt (a pinch)
- 0.5 tsp Vanilla extract
Steps
- 1
Preheat your oven to 350°F (175°C). Prepare a baking tray by leaving it bare; do not use parchment paper, as the direct contact helps the sugar caramelize.
- 2
In a small bowl, combine the melted butter, brown sugar, honey, a pinch of salt, and vanilla extract. Whisk until the mixture is well combined and smooth.
- 3
Slice the croissants in half lengthwise (down the middle).
- 4
Dip the cut side of each croissant into the honey butter mixture, letting any excess drip off back into the bowl.
- 5
Place the croissants directly onto the baking tray, cut-side down.
- 6
Lightly brush the tops of the croissants with a small amount of the remaining honey butter, being careful not to over-apply so they don't become overly sweet.
- 7
Bake in the preheated oven until the croissants are golden brown and crispy, and the honey butter coating is beautifully bubbly (approximately 10-15 minutes).
- 8
Remove the tray from the oven. Let the croissants cool on the baking tray for 10 to 15 minutes. This step is critical as it allows the sugar to harden and become crispy.
Notes
For a sweet and salty contrast, consider sprinkling a little Maldon sea salt on the croissants before baking. It is essential to let them cool on the tray to achieve the signature caramel crunch.
