- 1.5 lb chicken breast (cut into bite-sized pieces)
- 0.5 cup soy sauce
- 0.25 cup water
- 0.25 cup brown sugar (packed)
- 0.5 tsp ground ginger
- 0.25 tsp garlic powder
- 2 tbsp cornstarch
- 2 tbsp vegetable oil (divided)
- 2 cup broccoli florets
- 1 red bell pepper (sliced)
- 1 cup snap peas
- 4 cup cooked white rice (for serving)

In a small bowl, whisk together the soy sauce, water, brown sugar, ground ginger, garlic powder, and cornstarch until the sugar and cornstarch are fully dissolved to create the teriyaki sauce.

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the chicken breast pieces to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.

Add the remaining 1 tablespoon of oil to the same skillet. Add the broccoli, red bell pepper, and snap peas.

Stir-fry the vegetables for 3-4 minutes until they are tender-crisp and vibrant in color.

Return the cooked chicken to the skillet with the vegetables.

Give the teriyaki sauce a quick whisk and pour it over the chicken and vegetables.

Cook for 1-2 minutes, stirring constantly, until the sauce has thickened and coats everything evenly.

Notes
For extra flavor, you can garnish with sesame seeds or sliced green onions. If you prefer a thinner sauce, add a splash more water at the end.
