Ingredients
- 3 bell peppers (sweet, sliced)
- 2 cup tomatoes (crushed or diced)
- 4 oz feta cheese (crumbled, divided)
- 6 eggs (large)
- fresh herbs (chopped, for garnish)
Steps
- 1
Sauté the sliced sweet bell peppers in a large skillet until softened and slightly browned.
- 2
Add the tomatoes to the skillet and simmer to create a rich sauce.
- 3
Stir in half of the crumbled feta cheese, allowing it to melt into the sauce until creamy.
- 4
Make six small wells in the sauce and crack one egg into each well.
- 5
Cover the skillet and poach the eggs until the whites are set but the yolks remain soft.
- 6
Garnish with the remaining feta cheese and chopped fresh herbs before serving.
Notes
Serve with warm, crusty bread or soft, pillowy flatbread. Goat cheese can be used as a substitute for feta.
