Ingredients
- 0.25 cup sour cream (can substitute Greek yogurt or mayo)
- 2 tbsp ketchup
- 0.125 tsp cayenne pepper
- 1 tsp lime juice
- black pepper (lots of freshly ground)
- salt (pinch)
- 2 tbsp fresh cilantro
- 1 tbsp water (if need be to adjust consistency)
- 1 veggie patty (favorite store-bought (e.g., Trader Joe's Quinoa Cowboy))
- 1 slice cheese (Colby Jack, cheddar, or pepper jack recommended)
- 1 brioche bun (toasted)
- red onion (few slices)
- 2 butter lettuce leaves
- 2 slice tomatoes
- pickles (sliced)
Steps
- 1
Add all the special sauce ingredients in a small bowl: 1/4 cup sour cream, 2 tablespoons ketchup, 2 tablespoons fresh cilantro, a pinch of salt, black pepper, 1/8 teaspoon cayenne pepper, and 1 teaspoon lime juice.
- 2
Mix the sauce ingredients well. If the consistency is too thick, add 1 tablespoon of water to thin it out as needed.
- 3
Prepare your favorite frozen veggie patty. For a crispy result, air fry the patty for 8-10 minutes (or follow the toaster oven instructions on the box).
- 4
Once the patty is baked, place a slice of cheese on top. Close the air fryer or oven and bake for another 2 minutes until the cheese is melted.
- 5
While the patty finishes, toast the brioche bun until golden.
- 6
Open the toasted burger buns and spread a generous layer of the special sauce on both the top and bottom halves.
- 7
Place the cheesy veggie patty on the bottom bun.
- 8
Layer the sliced pickles, red onion, butter lettuce, and sliced tomatoes on top of the patty.
- 9
Top with the other half of the bun and serve immediately.
Notes
Veggie Burger Suggestions: Trader Joe’s Masala Burgers, Dr. Praeger’s California Veggie Burger, or Morningstar Farms Garden Veggie Burger. For a vegan version, use a plant-based patty, vegan bread, and substitute vegan sour cream and cheese. For gluten-free, use a gluten-free patty and bun.
