Ingredients

  • 4 Eggs (separated into yolks and whites)
  • 0.5 cup Vegetable oil
  • 0.25 cup Boiling water
  • 1.25 cup Sugar
  • 0.5 cup Chocolate drink mix (such as Shokolit)
  • 0.5 cup Heavy cream (for the cake batter; use plant-based cream or coconut cream for parve)
  • 2 tbsp Cocoa powder (high quality)
  • 0.5 tsp Salt
  • 1 cup Moulino gluten-free flour (cake or multi-purpose blend)
  • 1 tsp Baking powder
  • 0.5 cup Chopped chocolate (optional; grated or finely chopped)
  • 100 g Milk chocolate (for the ganache)
  • 50 g Dark chocolate (for the ganache)
  • 120 g Heavy cream (for the ganache)

Steps

    In a large bowl, mix the following ingredients in order: egg yolks, vegetable oil, salt, chocolate drink mix, cocoa powder, boiling water, and 1/2 cup heavy cream.

    Add the gluten-free flour, baking powder, and chopped chocolate (if using) to the yolk mixture and stir until combined.

    In a stand mixer, whip the egg whites with the sugar for 4-5 minutes until the foam is white, smooth, soft, and shiny.

    Gently fold the whipped egg whites into the chocolate cake mixture until just combined.

    Preheat your oven to 165°C (330°F). Grease a 20x30 cm rectangular pan with oil spray.

    Pour the batter into the prepared pan and bake for approximately 30 minutes. Use static heat mode, not turbo/convection.

    While the cake is baking or cooling, prepare the ganache. Heat 120g heavy cream with the milk and dark chocolates in the microwave and stir until a smooth ganache forms.

    Once the cake is baked, slice it into small squares using a sharp knife or spatula while still in the pan. This allows the ganache to seep between the slices.

    Pour the warm ganache over the cake, ensuring it covers the top and flows into the cuts. Re-trace the squares after pouring if needed.

Notes

For a parve (dairy-free) version, replace the heavy cream with plant-based cream or coconut cream. For a taller cake, use a 20cm round pan or a 20x20cm square pan. If making for a large party, double the quantities and use a 30x40cm pan.
